Wanna build a fort?

Remember when we were kids and building a fort was the coolest thing to do? Well we play fort adult style now! Last weekend C and I were discussing what we wanted to do, and C said, "Let's just stay in our fort (a.k.a stay home)!" Sweet, we can do that.

So for the last two weekends we've played fort . . . really the 100+ degree temperatures outside also encouraged this. We relaxed, watch movies, worked on projects, and made some awesome food (see below). We did leave the fort for a few hours to hit the neighborhood pool to play water basketball and go for a run. It was delightful. If you need a weekend "away," play fort.

Grilled Salmon with Asparagus

And of course chocolate chip banana pancakes, sorry no pics. :( I got this recipe from All Recipes, but tweaked it.

What you need:
1 cup flour
1 tablespoon white sugar (I'm tempted to try brown sugar for a richer flavor)
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons apple sauce, unsweetened
2 ripe bananas, mashed
1/2 cup chopped walnuts
1/2 cup chocolate chips

Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, apple sauce and bananas.
Stir flour mixture into banana mixture. Fold in walnuts; batter will be slightly lumpy. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake, sprinkle some chocolate chips on each pancake before flipping. Cook until pancakes are golden brown on both sides.
